Each plot is managed with meticulous care, with the sole objective of cultivating the grapes.of fruit of optimal qualityby maintaining low yields. The owners have chosen to obtain lower yields in exchange for a higher quality wine. For some years now, an effort has also been made to replant some of the vines on the estate, in order to gradually convert production towards aorganic farmingOnce harvest time arrives, usually from mid-September, the grapes are picked entirely by hand. They are only harvested after thorough scientific analysis and tasting to ensure they are picked at perfect ripeness. TransferWine technology is then used to transport the grapes from the vineyard to the winery, preserving thewhole bunchesand prevent them from being crushed or damaged during emptying by vibration.
