Bonnes-Mares Grand Cru

Location, climate and soils

The Bonnes-Mares appellation extends across Morey-Saint-Denis and Chambolle-Musigny in the Côte de Nuits . The vineyard forms a rectangle between the valleys of Morey and Chambolle , south of Clos de Tart. The vines are planted on a gentle slope, in clay-siliceous soils. The subsoil contains limestone and white marl. The vines are situated at an average altitude of between 250 and 280 meters. The vineyard covers approximately fifteen hectares of Pinot Noir vines.

The style of the wines

Only red wines are produced throughout the appellation. These are Grand Cru wines from the Côte de Nuits, highly sought after by connoisseurs of fine Burgundy wines. They are prized for their pronounced floral aromas and the finesse of their oak aging. The appellation's aromas evoke violets, undergrowth, and humus. Very elegant and rounded, the wines of this appellation possess very fine tannins. Their richness, body, and structured character give them exceptional aging potential. The best wines will age for 30 to 50 years, developing less floral and more earthy notes.

Food and wine pairing

These structured wines pair well with game, both furred and feathered, roasted meats, or meats simmered in sauce. Opt for roast or lacquered duck. This slightly spicy sauce will harmonize beautifully with the pronounced tannins of Bonnes-Mares Grand Cru wines. For an accompaniment, choose mushrooms, which will evoke notes of undergrowth and humus. Serve these wines between 14 and 16°C after decanting for at least an hour.
