              The Terroir: "The Pebbles"

              Cayuse's identity is based on a very specific soil located in the bed of an ancient river (the Walla Walla River). This terroir is composed of basalt pebbles rounded, several meters deep.

              • Analogy with Châteauneuf-du-Pape : These stones store heat during the day and release it at night, promoting optimal ripening.

              • Taste impact: This "stony" soil gives the wines a very distinctive mineral, saline and sometimes earthy signature (notes of blood, meat and black olive).

              The Philosophy: Biodynamics and Humility

              Christophe Baron was a pioneer of the biodynamics in the American Northwest.

              • Manual labor: THE domaine uses draft horses to plow certain rows in order to avoid compacting the soil.

              • Minimal intervention: The idea is to let the terroir express itself without artifice, with fermentations using indigenous yeasts and moderate use of new wood.

              The Iconic Grape Varieties and Vintages

              Although the domaine cultivates several grape varieties, it is the Syrah which brought him worldwide fame.

              • Bionic Frog: Probably the most iconic Syrah of domaine, known for its phenomenal intensity.

              • God Only Knows: A Grenache that rivals the greatest wines of the Rhône Valley.

              • Others : THE domaine also produces excellent Cabernet Sauvignon, Tempranillo and Viognier.
