This wine pairs very well with a meat dish. For example, a roast capon with chestnuts, beef bourguignon, or even a seven-hour lamb.

Owner and history

The vineyard covers 19.5 hectares. The vines have an average age of 45 years, and the grape varieties are 40% Cabernet Franc, 55% Merlot, and 5% Cabernet Sauvignon. The soils are clay-limestone and clay-sand with a siliceous character. Merlot and Cabernet Franc are planted in almost equal proportions, a characteristic of this unique vineyard!

Vinification and aging

The grapes are harvested by hand, in crates. This is followed by a double sorting before and after destemming. Vinification takes place in temperature-controlled wooden vats for 18 to 30 days, depending on the vintage. Malolactic fermentation occurs in barrels. Aging takes place in new barrels, on fine lees, for 15 to 20 months.
