The vineyard of Château Chasse-Spleen is rooted in clay-limestone soil, providing an ideal structure for cultivating noble grape varieties. The microclimate of Moulis, with its hot summers and mild winters, promotes even ripening of the grapes, allowing them to fully express their potential. The carefully planted vines receive meticulous attention throughout the year, guaranteeing a superior harvest. Each plot is cultivated with passion, respecting the unique character of the Bordeaux terroir.

Owner and history

For almost 50 years, Chasse-Spleen has been in the hands of women. Yesterday, Bernadette Villars, daughter of Jacques Merlaut, from 1976, then Claire, her daughter, from 1992 and now Céline, her second daughter since 2000. The vineyard is located on the Châteaux route, halfway between Margaux And Saint-Julien. Its appellation is the smallest in the Médoc. It features an exceptional diversity of complementary terroirs, from pure Garonne and Pyrenean gravels to clay-limestone.

Vinification and aging

Winemaking at Château Chasse-Spleen is a refined art, blending tradition and innovation. The grapes, carefully selected by hand, are vinified separately according to their plot of origin. After gentle destemming, fermentation takes place in temperature-controlled stainless steel tanks, allowing for precise temperature management and the extraction of delicate aromas. Aging occurs in oak barrels, some of which are new, promoting the integration of tannins and the development of aromatic complexity. This meticulous process ensures that each vintage reveals the authenticity and richness of the terroir.
