Vinification and aging

Winemaking at Château Palmer is a meticulous art. The grapes are carefully hand-sorted, then vinified in temperature-controlled stainless steel tanks, allowing for precise temperature control. Malolactic fermentation takes place in oak barrels, giving the wine added complexity. Aging, which lasts approximately 18 months, also occurs in barrels, a third of which are new oak, to enrich the wine while respecting the natural balance of aromas. This artisanal and attentive process reflects the commitment of the domaine towards excellence.
