Today, Domaine de Chevalier is run by the Bernard family, passionate about the art of winemaking. Under their guidance, the estate has successfully combined tradition and innovation, making each vintage a true reflection of its terroir. Their commitment to the environment and sustainable practices demonstrates their respect for nature and their desire to pass on this winemaking heritage to future generations. Their vision is clear: to produce quality wines that are authentic and representative of Pessac-Léognan, while preserving the harmony of the ecosystem.

Vinification and aging

The winemaking of L'Esprit de Chevalier 2019 is rooted in a tradition of excellence. The carefully selected grapes are vinified separately according to their origin. After hand-harvesting, they undergo fermentation in temperature-controlled stainless steel tanks, preserving freshness and aromatic expression. Aging takes place in oak barrels, some of which are new, for approximately 12 months. This process imparts complexity and depth to the wine, while respecting the identity of the terroir. The blends are crafted with care to create a wine that is both approachable and capable of aging gracefully.
