Vinification and aging

The pioneering winemaker Paul Hobbs founded his domaine eponymous in Sebastopol, California, in 1991. Guided by his vision and his desire to showcase the terroir, the domaine constantly refines its winemaking art by favoring minimal intervention practices and meticulous vineyard management. The volcanic and stony soils, characteristic of our domaine and the Coombsville AVA, impart a distinct minerality to the region's wines. domaine Nathan Coombs contains volcanic tuff—a sedimentary rock composed of compacted volcanic ash—as well as igneous rocks, formed by the cooling of magma. Cabernet Sauvignon thrives in these stony, well-drained soils, producing wines with complex and elegant fruit aromas.
