Vinification and aging

The Planteray 2003 Trinidad Rum is made using traditional methods. The sugarcane is pressed to extract the juice, which is then fermented to begin the distillation process. The rum is distilled in pot stills, allowing for a concentration of aromas. After distillation, the rum is aged in oak barrels, where it develops its complexity.
