The Castello di Ama vineyards extend across complex soils composed of clay, limestone, and schist, giving the wines exceptional minerality and structure. The vineyards' altitude, ranging from 450 to 520 meters, contributes to the wines' freshness and elegance. Nestled on the slope parallel to the Bellavista vineyard, this plot takes its name from the neighboring village. It was acquired by Castello di Ama in 1997. The vineyard covers 14.7 hectares and benefits from a south-southwest exposure, at an average altitude of between 420 and 508 meters. The soil composition is varied: rich in clay in the lower altitude areas and abundant in chalk and stones on the higher slopes.

Owner and history

The foundation of Castello di Ama dates back to 1976, when four families from Rome undertook to restore this prestigious domaine The wine industry in all its splendor. domaine, which initially covered 55 hectares in the heart of Chianti Classico, immediately benefited from major investments in the vineyard, thanks to the adoption of the most modern agronomic techniques of the time, and the construction of a new winery equipped with stainless steel tanks, a temperature control system and vast workspaces. This focus on quality, influenced by market trends, was further reinforced in 1988 with the arrival of Lorenza Sebasti, daughter of one of the founding partners, who became managing director. The shared vision of Lorenza Sebasti and Marco Pallanti enabled the domaine to obtain unanimous critical recognition since the 1990s, placing Castello di Ama among the very first estates of Chianti Classico and among the most prestigious in Italy.

Vinification and aging

Haiku was born in 2009 from the acquisition of the Montebuoni vineyard, whose replanting had been completed in 2001. This exceptional wine is a blend of three grape varieties: 50% Sangiovese, the rest being divided equally between Cabernet Franc and Merlot.

Vinification began with indigenous yeasts, separately for each grape variety, in stainless steel tanks at a controlled temperature of 30-32°C, with manual pump-overs and a total maceration period of 23 days for the Sangiovese, 26 days for the Merlot, and 23 days for the Cabernet Franc. After the first racking, the wine was transferred to stainless steel tanks for malolactic fermentation.

After malolactic fermentation, the three grape varieties were blended. The wine was then transferred to fine-grained oak barrels, 24% of which were new.

Its name is inspired by a traditional three-line Japanese poem, whose strength lies in its allusions to nature and which invites clarity of mind and imagination. Haiku is a powerful wine, initially supple, then impressing with its boldness, structure, and refinement.

Launched for the first time with the 2009 vintage, Haiku is the result of a reflection on the adaptation of international grape varieties to the high altitude terroirs of Castello di Ama (approximately 480 meters). It's the perfect bridge between Tuscan tradition and Bordeaux elegance. Where many Super Tuscans seek opulence, the 2017 Haiku remains restrained and vertical, true to its poetic name.
