Over the years, Bollinger has built its vineyard in the heart of the finest wines of the Champagne. The House's 180 hectares of vineyards are comprised of 85% Grands and Premiers crus and are cultivated by the House's winemaking teams across 7 distinct vineyards: Aÿ, Avenay, Tauxières, Louvois and Verzenay in Pinot Noir around the Montagne de Reims, Cuis in Chardonnay in the Côte des Blancs and Champvoisy in Meunier in the Vallée de la Marne. Bollinger is one of the only Houses in Champagne to produce the majority of the grapes used for its blends itself. Another distinctive feature of Bollinger is that two plots have always been spared by phylloxera: the Clos Saint-Jacques and the Chaudes Terres vineyard in Aÿ. These ungrafted vines are worked by hand, according to the ancient method of layering: a way of preserving this extraordinary heritage, from which the very rare cuvée is derived. Ghislain de Montgolfier, the founder's great-grandson, led the house for many years. Today, Jérôme Philipon is at the helm, bringing the same passion and dedication to excellence. The Bollinger family is deeply attached to its terroir and its values, and is committed to producing champagnes of impeccable quality.

Vinification and aging

Bollinger Rosé is a blend of over 85% Grand and Premier Cru wines. It comprises 62% Pinot Noir, 24% Chardonnay, and 14% Meunier. The red wine, with only 5 to 6% added due to its intensity, serves to define the style.
The addition of a superb red wine from the Poirier Saint-Pierre and Montboeuf plots in Verzenay, or from those in Aÿ depending on the year, cultivated in the same way as the vines of the legendary La Côte aux Enfants plot, gives it a certain aromatic power. And also a brilliance, a presence, a delicacy that are the hallmark of great blends.
