The vineyard is planted with two grape varieties: Sémillon (80% of the area) which brings richness, roundness and ample structure to the wine, and Sauvignon Blanc (20% of the area) cultivated for its aromatic character and great freshness. In Fargues, quantity is not the goal. Quality is paramount; the Fargues vineyard seeks to capture and bottle the aromatic explosion that makes its wine so special. The expertise of the "Lur Saluces," their centuries-old experience, and their absolute commitment to quality make the Château from Fargues an exceptional wine.

Owner and history

From their ancestor Françoise-Joséphine who decided on the advent of the harvest by successive sorting, to Bertrand who was at the birth of the AOC (Appellation d'Origine Contrôlée) and to Alexandre who long presided over the destinies of Yquem, the Lur Saluces are inseparable from these great Sauternes wines. In the 1920s, Bertrand de Lur Saluces, uncle of Alexandre, the current owner of Château de Fargues made the decision to abandon red wine production to devote himself exclusively to making a great Sauternes wine. He undertook a slow and costly task to completely replant the Fargues vineyards with the appellation's grape varieties, Sémillon and Sauvignon Blanc.

Vinification and aging

The men and women of Fargues will seek to domesticate this phenomenon throughout the year, by preparing and maintaining the soils and by taking care of the vines, thus promoting its action at the opportune time of over-ripeness of the grains.

The solution is simple but costly: grape harvesters must be asked to select the bunches, or even sections of bunches, and even individual grapes, that are affected and transformed by Botrytis cinerea. Harvesters are forced to sort the grapes and discard anything affected by grey rot, the harmful Botrytis cinerea.
Winemaking at Château de Fargues is part of a tradition that respects the environment. The grapes, harvested by hand, are carefully selected and destemmed before being pressed.
