Vinification and aging

Winemaking at Domaine Alain Graillot's winemaking is carried out with meticulous care, allowing the full richness of the grapes to be expressed. After hand-harvesting, the bunches are destemmed and gently crushed. Fermentation takes place in temperature-controlled stainless steel tanks, promoting a gentle extraction of tannins. Aging in oak barrels lasts approximately 12 months, allowing the wine to develop complexity and depth. This traditional method, combined with modern expertise, results in balanced wines that reflect the typicity of their terroir.
