Vinification and aging

Winemaking at Domaine The wines of the Rectorie are produced with the utmost care, respecting tradition. The grapes are harvested by hand to select only the finest. Fermentation takes place in stainless steel tanks, with rigorous temperature control. The wine is then aged in French oak barrels for an undisclosed period. This stage allows the tannins to soften and the aromas to develop greater complexity. Domaine The Rectory favours a low-intervention approach, in order to preserve the natural expression of the terroir.
