The Calcinaires terroir is composed of limestone and clay-limestone soils, typical of Roussillon. This type of soil gives the wines remarkable minerality and freshness. climat The warm, sunny Mediterranean climate promotes optimal grape ripening while preserving their natural acidity. The vineyards' exposure, often on hillsides, allows for excellent ventilation and protection against disease. Domaine Gauby takes special care in cultivating its vines, favouring environmentally friendly methods.

    Owner and history

THE Domaine Gauby is currently headed by Lionel Gauby, son of Gérard Gauby, founder of domaine. Lionel carries on the family tradition with passion and commitment, ensuring the preservation of the wines' identity and quality. He surrounds himself with a skilled and dedicated team, sharing the same vision of wine and the same love for the terroir. Together, they work to promote the Domaine Gauby and the wines of Roussillon throughout the world.

    Vinification and aging

The winemaking process is carried out with the utmost care to preserve the integrity of the aromas and the typicity of the terroir. The grapes are harvested at optimal ripeness, then sorted and destemmed. Fermentation takes place in concrete vats or oak casks, using indigenous yeasts. Aging then occurs in vats or barrels, for a period that varies depending on the vintage. Domaine Gauby favours long and gentle aging processes, in order to refine the tannins and add complexity to the aromas.
