Together, they work to promote the Domaine Gauby and the wines of Roussillon throughout the world.

Vinification and aging

The winemaking process is carried out with the utmost care to preserve the integrity of the aromas and the typicity of the terroir. The grapes are harvested at optimal ripeness, then sorted and destemmed. Fermentation takes place in concrete vats or oak casks, using indigenous yeasts. Aging then occurs in vats or barrels, for a period that varies depending on the vintage. Domaine Gauby favours long and gentle aging processes, in order to refine the tannins and add complexity to the aromas.
