Vinification and aging

The Meerlust Pinot Noir 2020 is crafted with meticulous care. The grapes are hand-harvested and destemmed before being fermented in concrete and wooden vats, allowing for a gentle extraction of aromas. The wine is then aged in French oak barrels, some of which are new, for 10 to 12 months. This method imparts an elegant structure and subtle oak notes to the wine, while preserving the freshness and purity of the fruit. Each stage of the winemaking process is designed to respect the integrity of the Pinot Noir, thus revealing its full complexity.
