Nestled in the hills above Fiesole, near Florence, the Bibi Graetz estate is today one of the most distinctive and brilliant names in Tuscan winemaking. Founded by Bibi Graetz, a painter turned self-taught winemaker, this estate challenges traditional norms with a free, creative, and resolutely quality-driven approach. The Colore wine, produced from century-old vines, embodies the estate's ambition: to create a great Italian wine without compromise, on high-altitude, low-yield vineyards, with respect for the fruit and the terroir. A rare and sought-after signature, at the pinnacle of Tuscany.

    Notes and pairings

    Tasting notes

Colore 2019 Rouge boasts a deep ruby robe with garnet highlights. The nose, intense and refined, reveals aromas of black cherry, violet, leather, and sweet spices. On the palate, the wine is powerful and full-bodied, structured by fine tannins, with a beautiful mineral energy. The long and precise finish expresses all the complexity and elegance of this top-flight Sangiovese.

    Food & wine pairings

This majestic wine pairs perfectly with grilled ribeye steak, truffle risotto or game in sauce.

The vineyard used for Colore 2019 comprises very old vines planted between 400 and 600 meters above sea level on carefully selected Tuscan hills. The soils are predominantly sandy-clay with a significant presence of schist and pebbles, lending freshness, tension, and complexity to the wine. Yields are intentionally low, allowing for natural concentration of the grapes. Each plot is vinified separately to fully express the unique character of the terroir.

    Owner and history

Born into a family of artists and without formal winemaking training, Bibi Graetz made his mark through passion, intuition, and exacting standards. His aim: to produce signature wines that reveal the purity of Sangiovese, without succumbing to trends or standardization. Since his beginnings in 2000, he has surrounded himself with a small, dedicated team, pushed the boundaries of quality, and placed his wines at the finest tables around the world. His hand-painted label reflects his unique, expressive, and profoundly human world.

    Vinification and aging

At Bibi Graetz, fermentations are spontaneous with indigenous yeasts in open wooden vats. No unnecessary additives, precise temperature control, and gentle maceration allow for the extraction of all the finesse of the Sangiovese. Colore 2019 is aged for 20 months in used French oak barrels, adding complexity without masking the fruit. The final blend results from a very strict selection of the best barrels.
