Vinification and aging

Winemaking at Domaine Anne Boisson is carried out with complete respect for Burgundian traditions. The grapes, harvested by hand, are gently pressed to extract the juice. Fermentation takes place in stainless steel tanks to preserve the freshness and purity of the aromas. The wine is then aged in oak barrels, some of which are new, to impart a subtle touch of wood without masking the typicity of the Chardonnay. This aging process, which lasts approximately 12 months, allows the wine to develop complexity and depth.
