Food & wine pairings

A wine of this stature deserves dishes that respect its texture:

  • Meats: A beef fillet in a salt crust, a roast duck with pink peppercorns or pan-fried sweetbreads.
  • Delicate flavors: Quail with grapes or mashed potatoes with truffles.
  • Cheeses: Cheeses from Burgundy such as Époisses (if moderately aged) or an old Cîteaux.

THE climat "Les Chaboeufs" is located south of Nuits-Saint-Georges, On a fairly steep hillside where the soil is rich in ferruginous oolites (which gives it that little touch of mineral complexity). In 2018, a sunny and bountiful year, Duband managed to capture the power of the vintage while maintaining incredible freshness thanks to its winemaking.

Owner and history

The young oenologist David Duban is considered one of Burgundy's rising stars. From his first wines, he established himself as an innovator thanks to his assertive and distinctive style, always in search of purity, without sacrificing the intensity and great concentration of the wine. Considered one of the modernists, David has, over the years, refined his technique and his wines have become remarkably elegant. David Duban has been making wines since 1991. Starting from a small domaine in Côte de Nuits, He expanded his vineyard by acquiring vieilles vignes exceptional Gevrey-Chambertin and More-Saint-Denis. Today, he cultivates 17 hectares of vines exclusively using organic and biodynamic methods, harvests only by hand, and uses very little sulfur. In the winery, a large portion of the grapes are left on the vine, and the wines are aged primarily in old barrels. David Duban's modern winemaking style yields wines of remarkable intensity and freshness, as well as exceptional fruit purity, without compromising the expression of each plot's terroir.

Vinification and aging

THE Domaine The Duband winery made the choice to convert to organic farming as early as 2006. A choice that simply became necessary. David Duband Firstly, for the environment, but also for the intrinsic quality of the wines. For this passionate winemaker, the quality of a wine is comparable to a large chain made of many links. Removing or adding a link doesn't change anything on the surface, at least not immediately, but its strength depends on it!

The team's opinion

David Duband is one of the most talented winemakers of his generation, famous for his style which favours finesse, the brilliance of the fruit and a perfect mastery of the whole bunch. THE 1er Cru "Les Chaboeufs" 2018 is a masterful interpretation of Nuits-Saint-Georges : less "earthy" than some neighbors, but absolutely elegant.
