Description

The vintage 2020 of Domaine Drouhin-Vaudon Chablis Premier Cru "Montmains" It distinguishes itself from its successor (2021) by a greater generosity and a sunnier maturity. While 2021 plays on tension and sharpness, 2020 offers a more complete profile, both fleshy and intensely mineral.

Thanks to its larger volume, the 2020 can handle slightly richer dishes:

  • Fish in sauce: A fillet of pike-perch with beurre blanc sauce or a trout with almonds.
  • Poultry: A chicken in white sauce or a chicken supreme with morels.
  • Exotic cuisine: It pairs wonderfully with high-end sushi or asparagus risotto.

The site: this vineyard is the northernmost in the entire domaine Joseph Drouhin in the Chablis appellation area. It is one of the seven Premier Crus due to its excellent exposure and the concentration of Kimmeridgian pebbles in the soil, which often gives Chablis a very recognizable typicity. History & tradition: In the 1960s, when the Chablis vineyards were largely abandoned, Robert Drouhin believed in the potential of this soil, ravaged a century earlier by phylloxera. He was among the first Burgundian owners to develop it, producing wines typical of their terroir of origin. The soil: Kimmeridgian limestone containing billions of tiny marine fossils in a whitish cement that must have been the ocean floor... 130 million years ago. This marine origin gives Chablis wines a unique flavor.

Owner and history

THE Domaine Drouhin-Vaudon is owned by the Drouhin family, a family of Burgundian winemakers passionate about their craft. Drawing on their heritage and expertise, they have created a domaine exceptional in Chablis, combining tradition and modernity.

Vinification and aging

Harvesting: by hand into openwork crates. Careful sorting if necessary.

Winemaking: Slow pressing of whole bunches in a pneumatic press. The last pressing juice is separated from the free-run juice. The juices ferment in stainless steel tanks after light settling.

Aging: in vats for 8 to 10 months.

Throughout the process, decisions are primarily based on tastings. This data is naturally supplemented by technical analyses. As with all the wines of the House, absolute priority is given to expressing the terroir and respecting the vintage character.

The team's opinion

The 2020 vintage is currently in superb condition. It has lost the "biting" vivacity of its early youth and gained in aromatic complexity. It is the ideal wine for those who appreciate Chablis with "body" while remaining true to its mineral character.
