Vinification and aging

Winemaking at Domaine Henri Boillot is a handcrafted process, blending tradition with modern techniques. The grapes are carefully hand-harvested and then gently pressed to preserve their integrity. Fermentation takes place in oak barrels, allowing for a subtle infusion of woody aromas. Aging lasts between 12 and 15 months, with regular lees stirring to enrich the texture.
