Vinification and aging

Winemaking at Domaine Jean Michel Stephan's winemaking is carried out with the utmost care, respecting tradition. The grapes are harvested by hand to select only the finest. Fermentation takes place in vats, using indigenous yeasts, to preserve the authenticity of the terroir.
