Vinification and aging

Winemaking at Domaine Jérôme Chezeaux is a meticulous process, blending tradition and modernity. The grapes are harvested by hand and carefully sorted to retain only the finest. Fermentation takes place in stainless steel tanks, where each batch is vinified separately to preserve the identity of each plot. Aging occurs in oak barrels, some of which are new, for approximately 12 to 15 months. This careful attention to aging results in elegant wines with a beautiful structure and aromatic complexity.
