Vinification and aging

Winemaking at Domaine Joblot is characterized by a total respect for the fruit. After hand-harvesting, the grapes are destemmed and placed in vats for a cold pre-fermentation maceration. Fermentation takes place under controlled temperatures, allowing for a gentle extraction of tannins. Aging occurs in oak barrels, some of which are new, for a period of 12 to 18 months depending on the vintage. This carefully controlled process results in wines that are both powerful and elegant, where the terroir is fully expressed.
