This Premier Cru comes from 3.8 hectares of vines on a late-ripening terroir on the left bank of Chablis. The nose is fresh, with aromas of Granny Smith apples and oyster shell. The palate is well-balanced with lovely acidity, while also displaying a beautiful richness and persistence. Very elegant, with all the hallmarks of a great Montmains!

This 2023 Chablis Premier Cru Montmains pairs perfectly with seafood, grilled or sauced fish, and poultry in creamy sauces. Serve at around 12-14°C.

Owner and history

The Premier Cru Montmains rests on a unique terroir: Kimmeridgian marl and clay-limestone soils, rich in minerals and marine fossils. The Domaine William Fèvre vineyards cover 3.69 hectares, facing southeast in the Montmains, Butteaux, and Forêt vineyard sites, benefiting from ideal exposure. This terroir imparts exceptional minerality and remarkable aging potential to the wines.

Vinification and aging

Gentle pneumatic pressing allows for delicate extraction, preserving the purity of the Chardonnay. Fermentation takes place in stainless steel tanks and French oak barrels (40-50%, averaging 6 years old) to retain the fruit's freshness while adding subtle complexity. Aging lasts 13-14 months, including 5-6 months on fine lees, enhancing the wine's silky texture and balance.
