Vinification and aging

All the fruit came from the southern Marlborough valleys and was primarily sourced from the Yarrum vineyard, located on the Brancott/Ben Morven ridge. Typical of this sub-region, the aeolian loess soils are composed of clayey silt with varying gravel content. The different plots are cultivated with a mixture of Pinot Noir clones, mainly Dijon 115, 777, and 667, as well as smaller plots of UCD5 and AM 10/5.

The vines are mainly planted on the hillside and trained in VSP (vertical positioning of shoots) with two canes, with a high planting density of 3,800 vines per hectare.
The grapes were harvested by hand and cooled overnight before being sorted manually.
Most of the fruit was then placed in open vats, most of which also contained a proportion of whole bunches. The grapes macerated on their skins before fermentation began with indigenous yeasts, and were then punched down daily. After fermentation, the wine was pressed, racked, and placed in French oak barrels (30% new).

Each clone was aged separately in barrels for 11 months, before blending at the end of February 2021. The wine was bottled in November, with an alcohol content of 13.5%, a pH of 3.68 and an acidity of 5.4 g/l.
