    Vinification and aging

    Winemaking at Torbreck is carried out with the utmost care, respecting tradition. The grapes are hand-harvested and rigorously sorted. Fermentation takes place in open vats using indigenous yeasts. Aging occurs in French oak barrels, some of which are new, for a period that varies depending on the vintage. This stage allows the tannins to soften and imparts complex notes to the wine. Bottling is done without fining or filtration, in order to preserve the wine's integrity as much as possible.
