    Owner and history

Hermitage is one of the most prestigious terroirs in the Northern Rhône Valley. The Pavillon vineyard extends across a plot situated on the steep granite slopes of the Hermitage hillside, a poor, stony soil that forces the vines to draw the necessary nutrients from deep within the soil. This unique terroir imparts a distinctive minerality and exceptional aromatic concentration to the wines. Cultivated biodynamically, the vineyard is worked with absolute respect for natural cycles, guaranteeing grapes of outstanding quality.

    Vinification and aging

The Hermitage Le Pavillon 2003 is made using traditional methods. The grapes are hand-harvested at full maturity and vinified in concrete vats, allowing for gentle extraction of tannins and aromas. The wine is then aged in oak barrels for 18 to 20 months, with a proportion of new barrels that promotes perfect integration of the wood, imparting subtle notes of vanilla and spice.
