Vinification and aging

The Cloudy Bay Pinot Noir is crafted with meticulous precision to preserve the purity and elegance of the fruit. The grapes are hand-harvested and carefully sorted, then destemmed and gently crushed. Fermentation takes place in stainless steel tanks, with a gentle maceration to extract aromas and tannins. The wine is then aged in French oak barrels, a proportion of which are new, for an undisclosed period, allowing its structure to refine and its aromatic complexity to develop.
