    Vinification and aging

    Winemaking at Domaine Comte Senard is a meticulous process that reflects respect for the fruit and the terroir. After hand-harvesting, the grapes are destemmed before being gently pressed. Fermentation takes place in temperature-controlled tanks, allowing for precise temperature management and the extraction of the Pinot Noir's delicate aromas. The wine is then aged in oak barrels, some of which are new, for approximately 12 months. This aging phase imparts aromatic complexity and refined tannic structure to the wine, while subtly integrating the oak notes.
