History of domaine

Origins & founder

Hervé And Claudine Bizeul founded the domaine around 1997–1998. With a background as a sommelier, restaurateur, and journalist, Hervé drew on this experience to craft a wine of rare character. Their initial, modest setup—with manual harvesting and artisanal pressing—quickly transformed: the cellar, initially housed in their garage, rapidly evolved into a model of innovative artisanal production.

Development & Recognition

Their ambition paid off: from 2000 onwards, the domaine extends to nearly twenty hectares, producing emblematic vintages (Sorcières, Vieilles Vignes, Clos of the Fairies) and Little Siberia. Awarded "Elected Grand" domaine of Roussillon” by RVF in 2004 and highlighted by Bettane & Desseauve, the Clos des Fées has established itself as a regional leader.

Vineyard

Location & area

THE Domaine of Clos des Fées now covers approximately 30 hectares vineyards nestled around Vingrau, in the Agly valley (Pyrénées-Orientales). Planted on clay-limestone and ferruginous limestone hillsides, these terroirs (mica schists, schists, marly gravels) give all the wines a remarkable structure and a typically Roussillon freshness.

Grape varieties & winemaking style

THE domaine cultivates a diverse range of grape varieties, reflecting its desire for diversity and expression of the terroir:

  • Reds : Grenache, Syrah, Mourvèdre, Carignan, Tempranillo, Cabernet Franc, Cinsault.

  • Whites and others : Grenache blanc, Grenache gris, Vermentino, Roussanne, Macabeu, etc.

The grape varieties used emphasize the vieilles vignes (70 to 100 years), guaranteeing concentrated matter and aromatic complexity. Yields are controlled (well below AOC limits), often around 20–35 hl/ha depending on the plots, in order to favor depth and typicity.

Winemaking & aging

Harvest & Fermentation

The grapes are hand-harvested and sorted in the vineyard, followed by a long maceration of 20 days with gentle punch-downs, carefully controlling tannin extraction without being harsh. The grapes are transported under refrigeration to preserve their freshness.

Sulfur-free farming and work

The wine is aged for 18 to 20 months in new oak barrels, exclusively on its lees, with sulfur added only after malolactic fermentation. Frequent topping up and the absence of filtration ensure a silky mouthfeel and a pure expression of the terroir.

  • Assembly 96% Grenache Noir, 2% Mourvèdre, 2% Syrah

  • Alcohol : approximately 15% vol. (between 13.5 and 15)

  • Livestock farming 18–20 months in new oak barrels, aged on lees, bottled unfiltered

  • Guarding potential : minimum 15 years, potentially up to 30 years, until 2046

Tasting

  • Dress : deep garnet with violet reflections

  • Nose Intense and complex, blending vanilla, black fruits (blackberry, blackcurrant), compote, blueberry tart, and menthol notes.

  • Mouth Full and fresh attack, dense and velvety tannins, balance between power and finesse, long, vibrant finish

Food and wine pairings

A gastronomic wine that reveals its full aromatic range over time. It pairs perfectly with:

  • Game (roe deer, pigeon, doe “grand veneur”)

  • Lamb in pastry, duck breast

  • Aromatic cheeses (Saint-Nectaire)

  • Sweet and savory or spicy dishes, provided the chili peppers are used sparingly.

  • Serving suggestion: at 16–18 °C, decant 1 to 2 hours before tasting
