THE EPIC SAGA OF VINE MEN
The story of theAeolus' domain.Christian Raimontpartners withMathias Wimmer(a professional oenologist), to purchase the vineyards in 1993. From the very beginning of this venture, a point of honor was placed on cultivating the vineyard exclusively organically. Composed of a dynamic and dedicated team, Domaine d'Eole obtained Ecocert organic certification in 1996.
In Greek mythology, Aeolus is the master of the winds. He accompanies and supports Odysseus in his quest. Today, this Greek god also helps the eponymous estate to produce ever-improving wines.
In 2017,Marc Rebouahbecomes the owner and the estate continues to be managed by Matthias Wimmer.

An enthusiastic wind on the hillsides of Provence
Located in Provence, at the foot of theAlpillesThe estate covers 30 hectares. The vineyard is within the appellation.Aix-en-Provence Hillsand benefits from the mistral wind and strong sunshine.
Grenache, Syrah, Cinsault, Counoise, Rolle and MourvèdreThese grape varieties share soils composed of limestone pebbles and clay. The estate uses no pesticides. More natural and environmentally friendly treatments are employed to preserve the soil. Meticulous work is carried out on the surface to control weeds.
To ensure the flourishing of all the vines, pruning is carried out in Goblet (for Mourvèdre) and in Cordon de Royat (for the other grape varieties).
Winemaking
TO BECOME ONE WITH PROVENCE
The styleMediterranean with Rhône influencesoffers a remarkable typicity and signature to the rosé (55%), red (35%) and white (10%) vintages.
The winemaking process is carried out in a traditional manner:
- Hand-harvested
- Total destemming
- Light tread
- Frequent reassembly
- Aged in stainless steel tanks then in barrels
