Vinification and aging

Winemaking at Diamond Creek is a meticulous process, designed to preserve the integrity of the fruit and fully express the terroir's potential. The grapes are hand-harvested, carefully sorted, and vinified in stainless steel tanks. Fermentation is carried out with indigenous yeasts, thus promoting the wine's aromatic complexity. Aging takes place in French oak barrels, a significant proportion of which are new, for an extended period. This stage allows the tannins to soften, enriches the aromatic profile, and gives the wine a silky texture. The wine is then bottled unfiltered to preserve its richness and complexity.
