The vineyard of Château The Chamirey estate is a true haven of biodiversity, where each plot is meticulously tended. The clay-limestone soils, typical of the region, offer excellent drainage, promoting optimal grape ripening. climat The continental climate, with its hot summers and harsh winters, contributes to the aromatic complexity of the wines. The vines, averaging 30 years old, send their roots deep into the soil, drawing the necessary nutrients to produce high-quality grapes. This attention to the vineyard is at the heart of the philosophy of the domaine, which aims to respect the environment while preserving the authenticity of its terroirs.

Owner and history

THE Château Today, the Chamirey estate is run by the Carabello-Baum family, who carry on the family legacy with passion and dedication. Their commitment to excellence is reflected in every bottle, where the art of winemaking is combined with respect for tradition. They have modernized practices while preserving the authenticity of ancestral methods. The family is also committed to environmental preservation, adopting sustainable practices to ensure the long-term viability of their vineyard. Their love for the Mercurey terroir is evident in the quality of the wines they produce, making the Château Chamirey is an essential reference in the region.

Vinification and aging

Winemaking at Château The wines of Chamirey are made with great respect for Burgundian traditions. The grapes are harvested by hand, guaranteeing a rigorous selection of the finest fruit. After gentle destemming, the berries are placed in vats for fermentation lasting 15 to 20 days at a controlled temperature to preserve the aromas. Aging takes place in oak barrels, some of which are new, allowing the wine to develop subtle woody notes while retaining the purity of the fruit. This artisanal approach, combined with meticulous attention to detail, results in wines of great elegance, revealing the full complexity of the Mercurey terroir.
