Vinification and aging

Winemaking at Château The wines of Mercurey de Chamirey are made according to Burgundian traditions. The grapes are harvested by hand and then gently pressed to preserve their integrity. The wine ferments in stainless steel tanks for better temperature control, which enhances the expression of fruity aromas. Aging on fine lees, for a variable period, refines the texture and complexity of the wine while preserving its freshness. This meticulous process results in a balanced and elegant Mercurey white wine.
