"The investment made in Mercurey will allow us toincrease productivity gainsbut above all to significantly improve the qualityDemand for mid-priced Burgundy wines is strong. We wish strengthen our position in this region "Erwan tells us Faiveley.

The wine cellar is, without a doubt, the largest and most modern in the entire "Chalon" regionEverything has been designed to simplify the flow of materials and to generate nearly 100 tonnes of grapes per day at the height of the harvest. The stainless steel tanks are temperature-controlled for a cold pre-fermentation maceration to give the Pinot Noir its crispness and brilliance. Here, punch-downs are kept to a minimum.

After about twenty days in the vat, the juice flows by gravity to fill the oak barrels located on the lower level. Aging will be short to avoid an overly pronounced oak influence. The bottling takes place at Nuits-Saint-Georges, in the main wine cellar of domaine.

The 2015 vintage promises some truly wonderful tastings.

In Mercurey, they're rubbing their hands together: The 2015 harvest was one of the best in 25 years.Admittedly, yields were lower at 35hl/ha compared to an average of 45hl/ha, but the results speak for themselves. Raw materials in perfect condition and a simple, completely natural winemaking process: 2015 is an exceptional vintage.

In the vineyard, a more than just sustainable agricultureBecause chemical treatments are now excluded for both pesticide and systemic purposes, cover cropping is mandatory between the rows. Lionel Bordier, the young estate manager, explains that he foresees many more actions to improve quality. This promises some truly excellent tastings to come.
