Even drier than Brut Champagne, Extra Brut Champagne is reserved for lovers of characterful and pure wines. With a sugar content of less than 6 grams per liter, it reveals a more pronounced acidity and great freshness. The delicate bubbles of Extra Brut give way to aromas of citrus, white fruits, and sometimes a subtle minerality that reflects its terroir. This style of Champagne is particularly appreciated with refined dishes such as oysters, caviar, or sushi, where the wine's vivacity enhances the flavor of the ingredients. The term Champagne Extra-Brut refers to sparkling Champagne wines to which between 0 and 6 grams of sugar have been added per liter. When the sugar content is less than 3 grams and no sugar has been added, the terms “ Brut Nature ”, “Dosage Zéro” or “Pas Dosé” may also be used.

Vincent Couche is one of the few Champagne producers to work organically . His estate is certified organic and Demeter. The conversion of his 13 hectares of vines to biodynamic farming has been official since 2008.

Vincent Couche offers three Extra-Brut Champagne cuvées. “Chloé” is a sulfite-free cuvée with aromas of pastry, candied fruit, and citrus. “Élégance” is sunnier and more refined, with notes of white fruit. Finally, “Rose Désir” is a tender and luscious Rosé Champagne .
