    Vinification and aging

    At Bibi Graetz, winemaking is gentle and precise: each plot is fermented separately in open wooden vats with manual punch-downs. Maceration lasts several weeks to extract the full aromatic richness of the Sangiovese. The 2020 Colore is then aged for 20 months in neutral French oak barrels. This method highlights the terroir's identity without masking the fruit, guaranteeing a pure, expressive wine built for aging.
