This wine is best served at around 15-17°C and pairs perfectly with a shoulder of lamb, a Corsican wild boar stew, or eggplant Parmigiana. Don't hesitate to open the bottle well in advance of tasting, while it's still young.

Owner and history

All the vines are cultivated organically and biodynamically. The winemaker works primarily with Corsican grape varieties that adapt beautifully to the island's climate. The vines face south and northwest and benefit from the influence of the winds. The temperature difference between night and day allows for optimal grape ripening while preserving the freshness of the bunches.

Vinification and aging

- Hand-harvested grapes
- Fermentation in barrels and concrete vats with indigenous yeasts
- Aged for 4 months in barrels that have held 6 wines and in concrete tanks
