Formerly owned by the monks of Pontigny Abbey, Monopole of Domaine Long-Depaquit, the "Moutonne" is a plot sheltered in a natural amphitheater in the heart of the Grands Crus, the historic and thousand-year-old sector of the Chablis vineyard. Located 95% on the "Vaudésirs" and 5% on the "Preuses" vineyards, with a south-southeast exposure, its shape and ideal location make it a true natural sun trap. Its steep central slope (nearly 40%) protects the plot from northerly winds. Bisected by a wall, the lower section produces a rich and structured wine, while the upper section imparts floral notes and greater tension.

Vinification and aging

Hand-harvested, grapes sorted, slow pressing at moderate pressure to respect the fruit.
Alcoholic fermentation and aging on fine lees: 75% in stainless steel tanks and 25% in oak barrels aged 1 to 5 years for 10 months.
Final aging in stainless steel tanks for 6 months.
