THE Domaine of Clos Fairies, under the impetus of Hervé Bizeul, proposes with la cuvée "A faun with his fife" (in red version, 2018 vintage) a fascinating and "northern" interpretation of the Catalan terroir.

While the white is already a gem, the red is particularly famous for its atypical blend in Roussillon: here, there is no Syrah or Grenache, but a marriage of Cabernet Franc (majority at approximately 80%) and Merlot.

Vinification and aging

CULTURE & TERROIR: Cabernet Franc from massal selection. Terroir known as "Cassenove," northern valley of Vingrau, at the western foot of a north-south oriented cliff. Merlot on lieu-dit "THE Clos "Fairies." A hint of Cabernet Sauvignon in a goblet.

WINEMAKING: Vinification of "blended grains" in a truncated conical stainless steel tank. Traditional vinification, at controlled temperature. Aging in new barrels, then in barrels that have held wine twice, then in tanks, until bottling.
