Vinification and aging

The first vintage of the MMAD team, and it's hard to imagine a better season.
Gentle and ideal ripening conditions have given rise to a Chenin Blanc with beautiful acidity and great aromatic richness.
The grapes were hand-harvested, and approximately one-third were pressed as whole bunches in old French oak barrels. The remainder was crushed for a longer maceration, then fermented in concrete tanks before being transferred to the barrels. This wine combines the finesse of whole-cluster pressing with the richer texture imparted by crushing, offering a complex aromatic profile that includes notes of citrus peel, kumquat, wet stone, burlap, and sea spray. The palate is long and structured by vibrant acidity, with excellent aging potential.
