Vinification and aging

The winemaking process for Prunotto's Dolcetto d'Alba is carried out with care to preserve the freshness and fruitiness of the grape variety. The grapes are hand-harvested and rigorously sorted. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks for about ten days. Maceration is short to extract supple and elegant tannins.
