The Crozes-Hermitage appellation was established in 1937 and produces some great wines, predominantly red. However, some white wines are also considered excellent within this Rhône appellation. Among the prestigious estates, Château Fayolle stands out. Other great Crozes-Hermitage wines can be discovered at Cavissima.

The Crozes-Hermitage appellation is located on the left bank of the Rhône River , in the Drôme department. It spans 11 communes surrounding Tain-l'Hermitage . It is an AOC (Appellation d'Origine Contrôlée) that produces both red and white wines. The grape varieties cultivated are Syrah for the red wine , and Marsanne and Roussanne for the white . The climate is temperate, slightly cooler north of Tain due to the granite subsoil. To the south and east, the mistral wind and more permeable soil help regulate humidity.

At Domaine Jaboulet, viticulture has always been practiced sustainably, but in recent years this work has been officially recognized: organic certification since 2013, High Environmental Value (HVE) certification in 2015, and more. Founded in 1834 in the Drôme region, this estate produces wines from the Côtes du Rhône , Hermitage , Crozes-Hermitage , Côte Rôtie , Cornas , Saint-Péray , and Condrieu appellations . It remained in the Jaboulet family until 2006, when it was acquired by the Frey company. Today, Caroline Frey, an oenologist, manages the estate. One hundred hectares of vines, averaging 40 years old, are cultivated with Syrah for the reds, and Marsanne , Roussanne , and Viognier for the whites. The estate's finest wines are aged in a 17-hectare underground cellar called Vineum, in Châteauneuf-sur-Isère .
