    Vinification and aging

    - Hand-harvested and sorted
    - Fermentation in temperature-controlled wooden vats for 3 to 5 weeks
    - Malolactic fermentation in barrels
    - Aged for 24 months, including 6 months in new (100%) oak barrels on the lees
