Vinification and aging

The Sancerre Blanc La Croix au Garde is vinified with the utmost care to preserve the expression of the terroir. The grapes are harvested by hand, allowing for rigorous selection. After gentle pressing, the must is clarified and fermented in temperature-controlled stainless steel tanks. Aging on fine lees for several months adds complexity and roundness to the wine. Before bottling, a light filtration is carried out to ensure the wine's clarity.
