    Vinification and aging

    Cornamus embodies our commitment to reviving local white grape varieties, with a particular focus on the exceptional Godello. For 45 years, we have dedicated ourselves to preserving the unique identity of this grape variety, renowned for its ability to reflect the freshness and balance of our terroir.
    To create Cornamus, we wanted to give Godello the undisputed starring role, enhanced by the minerality of our granite and quartz soils. We adopted a philosophy of minimal intervention, allowing the wine to express its natural elegance during its aging in our oldest casks. The result is a remarkable wine, reflecting the potential of our terroir and decades of dedication to restoring our winemaking heritage.
