Vinification and aging

Winemaking at Domaine Ardhuy is a meticulously orchestrated art. The carefully sorted grapes are destemmed before being placed in vats for traditional fermentation. Maceration is prolonged to extract aromas and tannins. Aging takes place in oak barrels, some of which are new, to add further complexity without masking the terroir. After several months of aging, the wine is bottled unfiltered, thus preserving its full authenticity.
