The vineyards of Domaine Denis Mortet, located in the founder's birthplace of Daix, reach altitudes of over 400 meters. This unique location provides Pinot Noir with ideal growing conditions, enhanced by a specific microclimate and soils rich in limestone and clay. The estate adopts an environmentally conscious approach, excluding the use of chemical fertilizers and herbicides in favor of natural organic amendments. These practices, combined with meticulous attention to every stage of cultivation, ensure high-quality grapes. Each vine is cultivated with respect for biodiversity, guaranteeing wines that fully express the identity and elegance of the Burgundy terroir.

Vinification and aging

The grapes at Domaine Denis Mortet undergo meticulous sorting to retain only the finest fruit. After destemming, alcoholic fermentation takes place using indigenous yeasts, thus preserving the full authenticity of the terroir. Aging for 18 months in oak barrels brings complexity and finesse to the wine, while enhancing its natural aromas.
