    Vinification and aging

    Winemaking at Domaine Joseph Drouhin is a meticulous art, blending tradition and innovation. The grapes are carefully hand-sorted before being destemmed. Fermentation takes place in wooden vats, allowing for gentle maceration that reveals the full richness of the fruit. Aging occurs in oak barrels, a percentage of which are new, for 14 to 18 months.
